Simple Summer Dish: Asian Napa Salad

This salad is as delicous as it is nutritious. Cabbage has SO many amazing health benefits. Not only does it improve digestion, but it also boosts your immune system, reduces inflammation, clears your skin, fights free radicals and improves brain health. Thats a whole lot of good for one salad!
You really cant mess this dish up. Even without measuring a single ingredient (which I typically dont when making dishes like this) You can also throw in some other ingredients if preferred like shredded chicken, snap peas, bell peppers, ect.

 INGREDIENTS:
 3 cups shredded napa cabbage   
 2 cups shredded red cabbage
 1 cup fresh grated carrots
 1/4 cup fresh cilantro
 2 green onions, chopped
 1/2 cup slivered almonds
 Ripe Avocado, diced in large chunks
 DRESSING:
 1/4 cup unseasoned rice vinegar
 1 tbsp maple syrup
 2 tbsp natural peanut butter
 2 tbsp soysauce or tamari
 1 tsp fresh ginger finely grated
 2 tbsp extra virgin olive oil
 1 tbsp sesame oil
 
  *Tip For the Ginger, I like to make batches of fresh ginger water at home in my vitamix. All you need to do is peel your fresh ginger and chop into a few large chunks, throw them in your mixer with water and blend. Use a cheesecloth when pouring into a glass jar to remove all the pulp and then freeze your ginger water into cubes. Whenever you need fresh ginger, its ready to go!
