Dates // 2 ways

As a third time mama currently in my third trimester (12 days til our due date baby!) I’ve now mastered all the yummiest ways to get in my daily date intake. Sure, you could go the quick & simple route of eating them plain or throwing some peanut butter on them but Ive got two delicious recipes that will have you craving these as a sweet daily treat.

Recipe One is for our chocolate lovers. Im talking as good as a snickers bar without the loads of sugar, gross additives, and a side of guilt.

Recipe Two is for our citrus lovers. This one has the most delicious lime flavor & is an identical dupe to the Key Lime Lara bar that was sadly discontinued. 

 

SNICKERS DATES:

Organic Pitted Medjool Dates

dark chocolate chips

crushed roasted peanuts

organic peanut butter

maldon flake sea salt

Open the dates halfway & fill with peanut butter. I like to stick a few whole peanuts in there as well. Chill them in the fridge while you melt the chocolate chips. I like to just throw them in the microwave for a few short intervels until completely melted. Take your dates out of the fridge and start coating them in the chocolate. Place them on parchment paper and sprinkle the tops with crushed peanuts & flake salt. Stick them back in the fridge to chill for an hour. Attempt not to eat the whole plate in one sitting!

 

 

KEY LIME DATES:

 12 organic pitted medjool dates

1 cup cashews

1 cup almonds

1 cup coconut flakes

1 whole lime freshly squeezed

Throw the nuts and coconut flakes into a blender until a fine powder (its ok if theres a few bigger pieces mixed in!) once blended, add your dates and lime juice. Blend until its the appropriate consistency to mold. You can roll these into balls or flatten into a rectangular dish with parchment paper and cut into bars once chilled. Optional: roll your balls in some crushed nuts or coconut flakes.
