Small Batch Apricot Jam

A more easily forgotten fruit of summer time, the apricot. Biting into a sun warmed apricot feels like capturing a piece of summer in your hands. You sit back in the shade, each bite is unhurried, a reminder that summer is meant to be savored slowly. Now imagine it in jam form. Its sweetness is deep and mellow, with just a whisper of tartness. Spread it thick on fresh bread, swirl it into yogurt, top it on crepes or scones, the possibilities are endless. Apricot jam is ready to be savored whenever you want summer to linger just a little bit longer.

INGREDIENTS:

8-9 (490 g) apricots, diced

1 Cup granulated sugar

1/2 Cup brown sugar

1/4 C fresh lemon juice

1/2 tsp pure vanilla extract (or vanilla bean)

Prepare the Fruit: dice the apricots (remove seed) and place the apricots in a pot.

 Add in the Sugar and Lemon Juice and mix until incorporated.

Heat the mixture on high until boiling, stirring frequently until the sugar dissolves. Lower to a med. high heat and let it cook until it reaches a temp. of 217 degrees.

Once its the desired thickness, stir in vanilla and remove from heat.

Pour the jam into a sterilized glass jar and let cool on the counter. Store in the refrigerator for up to a month.
But trust us, it wont last that long!
